Year after year, the Cambusier confirms its position as one of the best restaurants in the city, at the foot of a fine granite building. The recipe is one of regularity, not straying too far from the axis of good products and familiar recipes: scallop tartare and Cancale oysters with hazelnut shortbread egg emulsion, pavé of pollack with turmeric and cauliflower and ginger emulsion, vanilla pecan millefeuille with salted butter caramel. For an aperitif nibble, oysters, snails, rillettes of sardines, pork, cod... Good menu at €43, interesting cellar with appreciable labels (Sarrazin, Villard, Duband, les Huards, Barréjat, Pabiot...).
