We can both rejoice and lament the fact that the Parisian bouillon craze has spread to the provinces. We'll take the former attitude, on the grounds that these low-cost menus promote traditional French cuisine. This version is a success, thanks to its location near the Espace du Palais and its terrace overlooking the inner courtyard. On the plate, egg mayo at €2.50, tongue in jelly at €4.30, bourguignon at €12.40, pureed sausage at €9.60, in a beautiful canteen atmosphere. The long menu is enriched by daily suggestions of the moment.
