The original version of Parisian bouillon, unchanging, unmissable and, in a way, unrivalled, because it's the bouillon itself. The historic and popular setting lends itself to a true Parisian meal, where you must of course rely on tradition: frisée with lardons, herring with apples in oil, bourguignon with coquillettes, fried frankfurters, tongue with hot sauce, andouillette with mustard sauce. With prunes in wine or compote, you'll have spent €20 max, and perhaps even met some of your neighbors.
