For amateurs and tourists alike, this is an ideal introduction to the fundamentals of French cuisine: pâté croûte, goose rillettes and smoked ham from the Doubs, eggs mayonnaise, herring fillets with apples in oil, six Burgundy snails, followed by beef tartare, beef bourguignon, andouillette with mustard sauce, petits farcis, lemon-marinated chicken, fountain bleu with honey and slivered almonds.
