Gault&Millau's review 2026

For some time now, this has been the emblematic address of the boboïssime Saint-Georges district. A repertoire in the high bourgeois bistro tradition, a fine wine list led by Fred, a former sommelier at Gilles Goujon, and a tempting menu at gastro prices. Everything is quite good, well done and generous enough: poultry and morel mushroom pâté en croûte, snail and mushroom vol au vent, pig kintoa with Saint-Flour lentils in mustard sauce, thick veal liver in quince vinegar sauce. We conclude with a black forest with amarena sauce and, with a well-chosen glass of wine, without of course touching Polmard's matured meats, we've dropped a hundred as if laughing.
