On the slopes of Saint Gervais, facing Mont Blanc, Emmanuel Renaut is once again sharpening both his skis and his knives. Right next to the Bettex slalom run, this pole-slinging enthusiast has set up his brand-new mountain bistro: Le Boitet. A rustic atmosphere, all wood, with a frank and sincere ambience. A subtle blend of selected old furniture, clerestory and light woodwork. The menu is still a little short, but offers some lovely mountain dishes. La planche du chasseur, a soup of the day served in a thermos, and why not a pretty endive salad with citrus aromas. The dishes are gourmet: beef chuck pot au feu, mountain cheese crust, but also 100% game products, with this plump game sausage. It comes with a very subtle juniper ketchup. A number of relatively simple desserts complete the offer: a creamy floating island, a rice pudding with a runny caramel center, and pretty mountain-flavored tarts on the slate. And if you'd like to accompany this moment in the mountains with a few well-chosen glasses, trust Ludovic Namur, the in-house sommelier. He'll always have a few mondeuses or roussettes on hand before you hit the slopes, or to prolong the after-ski in style.
