In summer, you'll find yourself sheltered by the ramparts, in the shade of century-old plane trees, on the town hall's main square. In winter, you'll find yourself in a modern dining room with comfortable apricot benches, where Laurent Azoulay is hard at work behind his wood-fired oven. The aroma of the wood-fired oven heralds the arrival of a cuisine that harks back to the culinary traditions of the villages of the time. This attractive cuisine is prepared using only local produce, and not "for show". Excellent herb-flavored gazpacho, brousse and oven-finished tomato confit. A hearty rack of pink lamb, perfectly tender, sautéed apples, sliced butternut, reduced cooking juices, and candied plums, gently baked in the oven, on a delicious warm sabayon and thyme ice cream. Simple, friendly and delicious. You wouldn't expect such beautiful plate settings. It must be said that the chef has been well schooled, at l'Oustau de Baumanière and Jacques Chibois' Bastide Saint-Antoine. The short wine list features a fine selection of local biodynamic wines. The impeccable service is provided by Rachel Azoulay.
