The period of doubt about the future of the place has dissipated, and the penalizing work on the tramway has finally been completed. Although the tobacconist's business has been abandoned, you can still enjoy a cup of coffee in the early hours of the morning and scratch a few games before jumping on your train... or not! At lunchtime (and on Friday evenings), the atmosphere changes. In the vast room, the hushed atmosphere gives way to a joyful hubbub. People flock here to taste the cuisine of Benoît Le Corvez, who remains true to his commitment to good produce and generosity. Be careful, however, not to overcomplicate certain dishes. Beautiful scallops from the harbor are coiled in a potato espuma enhanced by a smoked salmon and granny-smith condiment. Pork from a Finistère farm, crousti/fondant with mustard seed, is accompanied by grenaille potatoes roasted with garlic and thyme.
