In a pure bistro setting, Lyonnais cuisine in the broadest sense of the word, drawing on the bouchon and bourgeois repertoires with finesse and without nostalgia: here, we know how to adapt tastes and recipes, in a fairly vast repertoire that reconciles a good pâté-croûte with gravlax salmon, pike quenelle with béchamel sauce, cod steak with mushroom and herb emulsion, veal liver with parsley and matured rib-eye steak with macaroni gratin. Honest "paris-bresse" for dessert, with hazelnut custard.
