Gault&Millau's review 2027

Overlooking the Ariège river, with a vast shaded terrace offering an ideal panorama in summer, this historic establishment taken over in 2023 by Yann Ghazal and his wife Aurélie (ex-Bibent in Toulouse) offers a cuisine blending tradition and personal touches. Crousti-coulant egg with mushrooms and sweet Gaillac wine is served alongside salmon ceviche with ginger, or a more daring combination of scallops roasted in white miso with endive cream, while beef cheek braised in red wine is a comfort dish. Desserts keep things light, from pistachio mille-feuille to apple tatin served with Madagascar vanilla crème fraîche. The wine list takes a tour of France, with some fine references, including the Pommard Les Bertins 2022 from Domaine Chantal Lescure, priced at €154.
