Gault&Millau's review 2026

The team has been renewed following the departure of Anthony Denon, with second-in-command Mylo Levin logically taking the chef's place. Nothing too revolutionary in the Burgundy's discreetly prestigious setting, in this atmosphere of ineffable good taste, with deliciously ceremonial service. The toques are retained, and the three courses of the moment give a good idea of the place, with the red tuna cucumber and coriander, saint-pierre artichoke and seaweed, and a pavlova-style strawberry dessert by pastry chef Léandre Vivier. The menu is reduced to four starters, four main courses and four desserts, which fill the three no-choice menus.
