In the spirit of a gentlemen’s club—which he is refining for a pampered clientele—Frédéric Vardon brings this venue to life with eloquence and expertise. A visit to this exclusive establishment—with its prime location, the charm of its lounges, and the view of Paris from the sixth floor—is naturally a memorable experience. All the more so with these three-toque dishes that complement the setting, in a well-executed vein of reimagined tradition: smoked Crisenon trout with kimchi-style marinated cabbage and horseradish cream, golden veal sweetbreads with French-style green peas, pan-seared cherries, clafoutis, and pistachio ice cream… A fine, classic wine cellar for connoisseurs, and unobtrusive, skillful service in keeping with the restaurant’s style.
