You're immediately struck by how busy it is, with the restaurant almost full as soon as it opens! The appointment seems to have been made with confidence and certainty, for this well-informed and epicurean clientele, satisfied in advance with a serious and even very affordable cuisine, with its first lunch menu at €25. Charlotte and Arthur Friess have made this one of the port city's most famous establishments, a luminous place with classic decor, parquet flooring, blond wood tables, a large open kitchen behind a molded blue wood counter, and windows throughout to let in the sunshine. The chef imagines a Breton cuisine infused with Asian inspiration, with an astonishing technicality and largely accountable for the quality of the moment. We start with the very fine amuse-bouches, the spider tartlet with candied egg yolk, the mackerel and chilli like sashimi, the cauliflower declination with masala condiment. We then discover exemplary creations, a starter of carrots, tamarind and sesame, the carrots like spaghetti in a well-spiced cream, beautifully fresh, the composition of spinach foot, allium and yuzu koshō, both peasant in spirit and modern in expression, a superb pollack with asparagus, bottarga and ground ivy, with an impeccable sauce. The dessert of hay, oats and honey is a fine tribute to the region, both digestible and gourmet. Well-stocked cellar with fine references (Naudin, Barret, Bretaudeau, Marnes blanches, Ogier, domaine aux Moines...).
