Bordeaux's former zoological institute has been transformed into a beautiful 4* hotel, taking advantage of the walls of this magnificent brick building from the early XXᵉ century. Here, you can admire the beautiful interior garden with its tropical airs, and take a break at the hotel's bistro, where you'll find market cuisine, a cocktail menu and a few drinks at the coravin. On the lunch menu, the perfect egg (very well executed), mushrooms en persillade and garlic cream, an asparagus risotto a little unbalanced in terms of seasonings and unfortunately a little dry in texture, a very nice popcorn tart, caramel insert and popcorn praline. The cellar is quite well stocked, with a few dozen references and some great vintages in the coravin, so you can treat yourself without breaking the piggy bank.
