Mickaël Emo started out as a trainee at Jardin d'Adam, and is now at the helm of the establishment, soberly entitled Émotions. The house's reputation is well maintained, with this masterful seasonal cuisine reflecting both the chef's youth and experience. The slash plates are well laid out: tomato tartlet, watermelon, smoked burrata and lime; barbecued blue lobster, farmhouse pig sausage with fennel and reduced jus; braised sweetbread, broccoli and lemon confit; fermented rice pudding, apricot and hay ice cream.
