New blood is flowing into this old inn, as 38-year-old Nicolas Tissier, a former chef at Piège and Le Squer, has replaced Philippe, the father who now welcomes customers and acts as sommelier. The cuisine on offer is divided into three blind tasting menus: €70, €105 and €140. After the amuse-bouche, two starters followed: white asparagus, parmesan sauce, wild garlic and green asparagus ice cream, then morels, poultry quenelle, chicken skin crumble; the meal continued with monkfish, peas, bacon jus. Veal sweetbreads, green asparagus and full-bodied jus precede a pre-dessert of strawberry gaspacho, rhubarb ice cream and an orange composition. Attentive service and a wide choice of wines in the cellar to accompany this cuisine.
