In the heart of the Carmes district, Hervé Bourg imagines an attractive bistronomic cuisine, which can take on gastronomic accents in the evening, with his discovery menus at €50 and €65. It's a contemporary, well-kept table, with uncluttered furniture and a beautiful presence of painted wood. For lunch, the chef revisits traditional cuisine, modernizing brasserie classics such as leek vinaigrette, fillet of saithe, sweet potato purée, roasted fennel and bell pepper cream, sautéed pork with seasonal vegetables and orange custard. Menu €27.
