Gourmet Restaurant Behind the majestic stonework of the 4-star L'Univers, young chef Brian Jourdan applies himself to the creation of good, seasonal, traditional cuisine. The beautiful lounges are put to good use, and the hotel experience is in keeping with its standing and clientele, whether business or leisure. À la carte, trompettes de la mort, carrots and onions in arancini, miso mayonnaise, Scottish salmon, green sauce, smoked paprika almonds and rice, Maine-Anjou beef like a carbonnade, roasted potato and carrot crush, finally a tartelette with local beer, 66% Mexican chocolate and coffee ice cream. Cellar a little short.
