Damien Fagette has never left the restaurant, having begun his apprenticeship here before climbing the ranks one by one. This house on the crest of Monbazillac offers an exceptional view of the Périgord and Bergerac, as an introduction to the chef's regional cuisine, contemporary compositions based on the terroir, on menus ranging from €65 to €110. These include grilled foie gras escalope, raw and cooked strawberry marmalade, sablé with Périgord walnuts and balsamic vinegar, Madame Duret's asparagus, black sesame hollandaise, grilled langoustine and quail egg à la plancha, a two-course beef fillet, and a classic hot Grand Marnier soufflé.
