The bishops of Tulles used to have their summer residence here, in this magnificent château suspended above the Dordogne. Today, the medieval building is home to a 3* hostellerie, which will delight history buffs as much as summer guests, with its swimming pool, panoramic view and library. For meals, the chef has turned to the great French classics, to be found à la carte and in two menus at €45 and €70. There's the velouté de haricots tarbais, truffle oil, spiced smoked duck breast ham, filet de saint-pierre just seared, cockle and coconut sauce, butternut and black sesame, quail stuffed with foie gras and porcini mushrooms, or pavé de cerf, forgotten vegetables and winegrower sauce.
