In this beautiful manor house away from the crowds, tradition persists, even after the departure of the chef, who was immediately replaced by his second-in-command, Aurélien Sindicq, who has taken over with brio, following the right path, that of academic cuisine, bourgeoisly dressed, with enough culinary effects and gestures in each dish to please the fine clientele: saint-jacques en chapelure de sarrasin châtaignes en mousseline et torréfiées sabayon champagne émulsion sarrasin, pâté en croûte veau et faisan condiment foies de volailles, lieu jaune et andouille de Guéméné salsifis jus de viande, soufflé Grand Marnier crème glacée au bourbon. The toques are maintained, the menu-card at €55 is fair, varied and well served, the cellar is classic with a choice from all regions.
