Over the years, the cuisine has been refined around a menu that evolves weekly according to the products of the moment. Oysters from Leucate in two textures - plain and cucumber, kiwi and preserved lemon - are absolutely fresh in the mid-July heat; Iberian pig is lacquered, its skin crispy on Asian noodles; squid (cooked to perfection) stuffed with herbs is accompanied by a spelt risotto with local tomatoes; desserts are of the same high standard, like this airy coconut dome with a heart of raspberries and homemade blackcurrant sorbet. Wines from the estate accompany every dish, and the local "Sémillante" water is offered free of charge.
