The restaurant is a tribute to the Jura sculptor Jean-Joseph Perraud, and offers regional cuisine by Gabriel Janod. The chef's dishes are inspired by tradition, and include such gourmet delights as a perfect egg, artichoke, smoked bacon and parmesan cream; prawns, leek cream and parmesan rice; Burgundy poultry supreme, comté risotto, morel mushroom sauce and vin jaune; a Franc-Comtoise dish with potatoes, Morteau sausage, Savagnin cancoillotte, smoked ham and strawberry crème brûlée.
