Chef's Restaurant Set on the road overlooking the sea, this architecturally unassuming but well-placed house offers a sober setting, with tablecloths overlooking a corner of the calanque. The welcome is smiling, the service well-managed, and Nans Gaillard's cuisine well received by regulars. A good start with the sea bass ceviche confit with citrus fruits, avocado bavaroise and Aquitaine caviar, more a carpaccio than a ceviche, with a remarkably fresh quality, before the well-cooked pollack, rubbed with curry and poached oyster, a slightly thick green sauce, and the beautiful quasi lamb, stewed chickpeas with fresh herbs, crispy breadcrumbs, light Lautrec garlic cream, with tender, juicy flesh, rosy cooking and a very pleasant herb jus. The dessert is well-balanced, with praline on a shortbread base, gianduja ganache and yuzu sorbet, and a well-stocked regional wine cellar, including by the glass.
