Selected It's a remarkable 16th-century château with perfectly preserved architecture, complemented by a high-standard 4* hostellerie. To satisfy the desires of his clientele, Éric Jung offers regional gourmet cuisine that combines the good with the beautiful, Périgord chic with classical inspiration. These include duck foie gras IGP du Périgord confit with Espelette pepper, conference pear and pear/ginger chutney, Inval trout marinated in pink berries, smoked beet and verjuice condiment, slow-cooked skrei fillet, green asparagus from Mallemort and mandarin and cardamom emulsion, IGP Périgord goose breast a la plancha, kasha and young leeks, Cîmes berry jus, gariguette strawberries in a crisp shell, Tahitian vanilla and mimosa cream. A fine cellar with over five hundred wines (Domaine Conti, Elian Da Ros, Arretxea, Zind Humbrecht, Dagueneau, Mas Jullien, Roc d'Anglade, Léon Barral, Jamet, Rayas, Méo-Camuzet, Léoville Las Cases, Cos d'Estournel, Palmer...). At the time of writing, chef Éric Jung has announced his departure. The note is therefore suspended for the time being.
