In the Anjou countryside, at the turn of a small road winding through the Layon vineyards, a contemporary building houses a restaurant where chef David Guitton delights us with a cuisine of apparent simplicity, precise execution, clear composition and bold combinations; homemade tarama is paired with salmon cooked in salt on a parsley purée and mushroom strips; pollack steak is sublimated by a green lentil purée from the village next door, with an airy beurre blanc; the desserts are not to be outdone, such as this precisely measured chartreuse cream, preserved lime, bergamot sorbet and citrus supremes; obvious talent and technique, an artful combination of products, a harmony of colors and tastes make this an exceptional moment at an affordable price; the cellar is identical, with a wide range of wines produced on the estate, but not only, as the sommelier introduces us to hand-picked bottles from winemakers.
