Chef's Restaurant It's always a pleasure to sit at Takayuki Kamiya's table, which can be spotted on the seafront thanks to the majestic hundred-year-old maritime pine that pierces the ceiling to touch the blue sky. The Japanese chef is at ease with the classics of French cuisine, but doesn't forget himself and extends the experience with touches that borrow from Japanese cuisine. The menu, which changes according to new arrivals, offers a fine start to the three-course €45 program: radish and shrimp mochi with a few shiitakes, topped with a beautiful shiso leaf, all in a dashi broth, a filet of duck cooked on a Japanese barbecue with celeriac purée and a puff pastry turnover containing the confit leg, prepared like a rillette. As for pastry chef Claire Kamiya, she chisels her desserts with the same passion. Take a look (and a spoonful) at the rum baba or the chocolate, coconut, mango, pineapple and sansho pepper cream. The cellar is well thought out, and a saké menu allows you to vary the pleasures. Service is perhaps a little timid.
