Gault&Millau's review 2026

Josselin Marie, who was among the recipients of the Gault&Millau Young Talent Grant in 2019, has never strayed from the eco-friendly approach he has committed to since opening his restaurant. We can only applaud this commitment, just as we applaud—at last—his decision to no longer systematically hide his menus, allowing customers who wish to do so to consult the menu before making a decision, and even adding a few seasonal specials. The technique remains solid; plant-based dishes no longer take center stage as they once did; and the two-toque rating remains strong, thanks to the lovely preparation of pointed cabbage, ginger, and chili, and the subtly nuanced pairing of Sicilian eggplant, charcuterie, and plant-based ricotta. A young and motivated team brings the dining room and kitchen to life; the desserts (a delicious combination of apricot, in various forms, and black olives, and an elegant marriage of strawberries and arugula in a mille-feuille style), the wine cellar, however, is too limited, though it should gradually expand in 2027.
