Chef's Restaurant A stone's throw from the Panthéon, this eco-responsible restaurant is run by Breton chef Josselin Marie, who honors seasonal vegetables with a nod to the tides. You can discover his cuisine in 3, 5 or 7 steps, with hidden suggestions and food and wine pairings. In letting ourselves be taken by the hand, with no choice for the five vegetal beats, we missed a touch of gourmandise, even if the execution is meticulous: a mousseline of peas and verbena jelly, followed by pointed ginger cabbage wrapped in a thick layer of tempura, then zucchini in different textures: grated, compote and flower, accompanied by a small piece of hake. We finish with two desserts, the first with lemon and the second with strawberry. Relaxed service by the kitchen staff, and for fine weather, a terrace planted with trees.
