Previously two toques at his restaurant in Saint-Pol-de-Léon, Sébastien Méhaux and his family moved here three years ago, and have enjoyed continued success. The chef stands for intelligent, masterful cuisine, with modern compositions offering an innovative take on the terroir, as seen particularly in his €89 menu, with its combinations of slash, mushroom and smoked soy, monkfish, almond and shiso, red tuna, sesame, rice and raspberry. Desserts are signed by his wife Delphine, for example a well-balanced sweet of chocolate, coffee and green cardamom. Good cellar selection by Hugo Prats.
