The chef interprets Breton culture through a traveler’s intuition, freely drawing on flavors from far-flung places. Beneath the beautiful glass roof, diners can enjoy squid cooked to perfection over a potato stew with squid ink and smoked chili oil, slow-cooked wild sea bass served with kale and mushrooms, cockles and shallots bound with whipped butter and Régence sauce, a duck breast cooked breast-side down and roasted, served with a turnip medley and peanut butter sabayon, duck jus with lime, or a dessert of cedrat poached in coconut water, delicate lime meringues, coconut cream, and blood orange sorbet.
