Just north of Paimpol, this glass house is home to Anthony Pierson's contemporary cuisine. The chef draws on Breton culture with a travelled intuition, invoking flavours from further afield. Under the beautiful glass roof, you'll discover squid cooked with fear on a potato ragout with squid ink and smoked chili oil, wild sea bass cooked gently, pressed with kale and mushrooms, cockles and shallots bound with a beurre monté and Regency sauce, a filet of duck cooked on the chest and roasted, turnip variation and peanut butter sabayon, duck jus with lime, or a sweet citrus poached in coconut water, fine lime meringues, coconut cream and blood orange sorbet.
