Chef's Restaurant An elegant and welcoming home, with its terrace opening onto the garden. Following Arnaud Davin's departure for other climes (Morocco, then Marseille, where he took over at the Intercontinental), it's Anthony Pierson who now runs this travel-friendly establishment, a former château outbuilding. The Ardennes-born chef has acclimatized perfectly to the climate, and his dishes have a good sense of the sea spray and of a job well done: spider crab salad with its bisque in the spirit of a roll, roast st. Pierre with chard and rhubarb, cream of smoked carcasses, buckwheat apple with lemongrass to keep with the theme. The two toques are retained, with good prospects, and a bar counter to experience the place from another angle.
