A pretty stone house, out of the way and easy to get to, for a cuisine that's both rooted and inventive. Anthony Pierson has a wealth of experience and a genuine openness to the world and the times. This is reflected in an eclectic menu where tastes are in the nature worked with finesse: shellfish tartare au naturel voile de poireau brûlé bouillon ponzu au vert de poireau, soufflé vapeur de chapon fermier sauce vin jaune et salade d'endive, pot-au-feu de saint-jacques et ravioles de queue de bœuf. Good, classic chocolate espelette dessert by pastry chef Perle Hennemann, eight-course menu at €98 (€75 à la carte for starter, main course and dessert).
