Chef's Restaurant After many ups and downs at the Hôtel du Palais, calm is gradually returning. The main - and gastronomic - restaurant, entrusted to the new chef Christophe Scheller, is now called La Rotonde, in the large and beautiful eponymously-shaped room, and the brasserie no longer exists, in favor of La Terrasse. The cuisine has thus taken a wiser, more classic turn to ensure the liner's stability. The dishes are well-constructed, and the produce of high quality: spider crab and zucchini flower, duck foie gras confit with strawberries and quince in sherry, Grenoble-style pollack and lemon dessert (in July, why not?), fresh herbs, olive oil and meringue flambée, in an à la carte sequence priced at around €130. Very good service, in keeping with the "Hôtel du Palais" style, with sommelier Clara looking after the extensive wine list with ease and discernment.
