Gourmet Restaurant In one of Europe's most beautiful châteaux, in the heart of Provence, a Relais & Châteaux**** has been set up, with luxurious rooms and a respect for historical style, inside and out. The former 12th-century fortress, richly appointed and exceptionally well-preserved, is also home to Thierry Frébout's restaurant, which serves a fine cuisine based on local produce to a wealthy, middle-class clientele. The menu lives up to expectations, with roasted langoustines with asparagus and lapsang souchong tea broth, turbot fillet on the skin and fennel fondue with Geneva sauce, smoked lamb chop with garrigue hay and skewer of pan-fried sweetbreads with spring vegetables. Classic desserts.
