Gourmet Restaurant Since the departure of Christophe Dufossé, this magnificent hotel has opted for a simpler restoration, in a setting that's still as stunning as ever (that of a former 16th-century military building) and rewarding (especially if you're seated in the large room furthest from the bar). A few tapas to nibble on the go, and a menu in tune with the times, between a well-made tartare of lean meat, snow peas and preserved lemon and a comforting filet of beef and cabbage stuffed with bacon.
