Sébastien Rival has returned to his homeland after a number of successful stints in the dining rooms of some of Paris's finest establishments. He has retained the spirit of beautifully decorated tables, with elegant tableware designed by a local ceramist. Chef Justine highlights classic dishes such as black pudding on a jus de viande jelly, roasted or pickled vegetables of the moment, before spicing up a parsnip purée with star anise around pork cheeks in cider. For dessert, poached pear with red wine reduction is a perfect match for gingerbread mousse. An original appetizer: coffee jelly in a mousse with celery pieces. The toque is confirmed in a lunch menu at €39, including a glass of wine and coffee; in the evening, an à la carte menu offers more elaborate dishes such as snacked monkfish, salsify, samphire and green pepper sauce.
