Daughter and granddaughter of farmers, Cécile Briaud-Richard's awareness of work and terroir is evident throughout the meal, as is her respect for produce and seasonality. Her dishes are full of humanity, capturing the spirit of the land and giving us a glimpse of the Charentes region. Working with Renaud Richard's cellar, full of fine references, the chef brings the countryside to life in this elegant renovated farmhouse. Enjoy roasted langoustine tails with fresh peas, lemon verbena stracciatella cream and lace tuile, fillet of locally caught st. Pierre, gnocchi with sea herbs and fresh samphire, or roasted French veal fillet, asparagus and morel mushrooms in a smooth purée, stuffed jumbo morel mushrooms, green and white asparagus grilled on a "green egg" barbecue, veal jus with morel mushrooms.
