At the helm are Germain Caillet and Charlotte Brochard, the former in the kitchen and the latter in the dining room, offering organic, seasonal cuisine and the most agreeable service. Open only at lunchtime, the restaurant boasts a very attractive €26 menu, always fresh and to the point. The menu includes a flaky tart with Cancale clams, spinach and marinière emulsion, Saint-Gilles sea bream with chickpea mousseline, red cabbage and beurre blanc, roast chicken with potato mousseline, oyster mushrooms, poultry jus and crème poulette, and a floating island with sunflower seed praline. Good cellar in constant rotation.
