Gault&Millau's review 2026

Normans are delighted to see the revival of this Paquine, which was a favorite address some thirty years ago. Especially since it has been taken over by a pro, Claude Tesnière, who once worked at Demoget's Les Capucines in Petit-Quevilly. The house still has its charm, and the chef's dishes are not lacking in allure, even if they follow fashions a little too much and the terroir a little too little: ceviche with fresh herbs, melon and peach in a ginger passion vinaigrette, beef tataki and spaghetti with squid ink and basil, pavlova with seasonal fruits..
