The great history of Nice with a capital letter would not be written with such panache and gourmandise if the Merenda didn't exist. A legend supported by "ni ni" (no telephone, no credit card, no reservation...) but one that has mellowed a little over time. Thanks to Dominique Le Stanc, an accomplished champion of the Nissette cuisine we all love, the heritage has been preserved and magnified as it should be. Everyone still remembers with emotion, sometimes years later, their first stockfish, their first ratatouille, their first farcis... This much sought-after authenticity, but with the perfect mastery of the chef's and pastry chef's gesture, is found here, in this restaurant no bigger than a garage, with all the restraint and generosity of a chef who offers us one of the best meals of local cuisine in the whole country. When technique melts away to make way for emotion, we can only bow our heads.
