After traveling the world's oceans, he settled behind the stove to embark on another successful adventure, and has been delighting your taste buds for years. His work is guided by his intuition and his love for raw local produce. He reveals himself in his creations by using mushrooms, herbs and other flowers he picks. Bear's garlic wakes up a fondue or forms the base of a pesto for crozets. Meadowsweet sublimates Savoy trout or infuses pannacotta with passion fruit coulis. Vegetarian gourmets and traditionalists alike will be delighted by our ravioles with vegetables of the moment, duck breast flambéed with chartreuse, lamb mouse confit, venison tournedos Rossini or veal kidneys with morel mushroom sauce. Satisfying every sweet tooth, his homemade desserts are a perfect conclusion.
