This Dijon favorite continues its adventure in style with Marie-Cécile and Vincent Gomis, who took over from Sylvain Gauthey two years ago. The charm of the setting is complemented by the fine contemporary cuisine of a well-trained chef (Putelat, Frechon), nourished by quality products beautifully combined: milk-fed veal tartare with lemon kombu sorbet and tuna emulsion, lamb shoulder confit with artichoke barigoule, lemon confit and anchovy jus, red fruit panna cotta verveine in a good and eloquent formula at €59. In the evening, we hide and impose, in seven or nine courses (119 and 139 €).
