Chef's Restaurant The duo of Nicolas Montceau, savoury, and Julien Bonnal, pastry, works very well, and there are always good sensations to look forward to on the plate. In the hotel setting, a rethought organization, with an open kitchen, for greater conviviality in this beautiful Basque-colored building, where every detail - the bread, the mignardises, the appetizers - is the object of attention. Very clear flavors in the red tuna carpaccio with a citrus marinade, the monkfish medallions with tomato and basil, the scampi with black olive zucchini flower from Kalamata, and a new mention for the desserts, on the one hand for the greengage, and even more so for the chocolate, widely declined (brownie, gavotte, palet...) with an aromatic herb sorbet (parsley, coriander, tarragon, mint). A good all-male team in the dining room, and an interesting cellar of 150 wines from all regions, brilliantly managed by Maxime.
