This house nestled in its own grounds, twenty minutes from both Marseille and Aix, is a blessing for epicureans. The calm and luxury of a carefully maintained and embellished bastide combine with the Provencal culture of Mathias Dandine, an ideal host who knows his region, its treasures and its producers by heart. The menu is an elegy, an ode to the flavors of the South, with that hint of luxurious chic that the chef distills to perfection. The "châtaigne de mer" (sea chestnut), as in an ursinade full of character, opens the ball with its truffle butter. Focaccia-crusted red mullet brings the Mediterranean to the plate, with its aromatic stuffing and diced golden turnip with saffron. Racan's guinea fowl is a marvel, with its melt-in-the-mouth leaf, kohlrabi and truffle, enhanced by a burnt onion jus, before the splendid and quite astonishing interpretation of baba, both crunchy and soft. Here's a place where, despite the rather opulent style of this manor house, everyone feels at home and in good company, with excellent service and an ever-watchful eye. The Provençal wine cellar is well-adjusted and knowledgeably advised, and the choice by the glass is always an interesting one to discover.
