From the Ill to the Loire, chef Fabien Raux is definitely a man of the banks, always with one eye on the movement of the waves, no doubt inspired by that fertile spirit of impermanence. With his wife Marie, the former chef of 1741 and Alexandre Gauthier has taken possession of this charming farmhouse, with all the space he needs to express his art and his vision of the product. His one-hectare kitchen garden gives him autonomy over fruit and vegetables, which he sublimates in some very fine local menus, where we come across leek mosaic and hay hollandaise, the alliance of foie gras, artichoke and buckwheat, scallops are worked with butternut squash and bard cream; venison is cooked in an anthology pie, with sweetbreads and foie gras. Then there's beaufort and pear condiments, and a soufflé chocolate tart with undergrowth. As for the wine cellar, Florian Picard, our sommelier, is at the top of his game, both in terms of selection and commentary. Lunch menu €48.
