Remarkable Restaurant We first met Fabien Raux a few hundred kilometers from the tranquil Roanne countryside, in Strasbourg, at the helm of 1741. The former pupil of François Adamski and Alexandre Gauthier and his wife Marie bought this venerable house in 2021, gradually transforming it into a delightful auberge whose only shortcoming, no doubt, is that it imposes "surprise" menus (which you can still discover once you've sat down to eat, if you wish). Relying on an immense vegetable garden of over a hectare, which supplies practically all the fruit and vegetables required, the former resident of Le Meurice proves that he has gold in his hands and great sensitivity: his pea tartlet, fresh yoghurt and pod cream is magnificent in its freshness and intensity, the carrot and black lemon omble-alis flirts with the four toques, as does the bewitching cherry-chocolate dessert, with its subtle flavours and finely worked textures. A hushed atmosphere (it's not impossible that the dining room sounds a little hollow on certain weeknights), service in the right balance, both discreet and professional, a cellar passionately defended by the excellent Florian Picard.
