Remarkable Restaurant Today, Édouard Chouteau is a happy Laitier: the bourgeois house on the outskirts of Lille is as beautiful and attractive as ever, offering a landscape of greenery through the large windows of a luminous dining room. In 2021, we placed our bets on this young chef, freshly arrived in this regional gastronomic bastion: "There will be a Laiterie Chouteau period that will last over time", we announced at the time. Four years later, we can confirm: this cuisine has style, it's chewy, it escapes fashions, it's both distinguished and rooted, exactly what we expect here: the oyster pig and herring, because it's a sweet rustic-marine pleasure, the "fruits à eau" (watermelon, cucumber, melon) with squid chorizo sauce and wild garlic pesto in a beautiful balance, before the soft gourmet crepe haddock et langoustines coquillages sauce Noilly, a melting texture slightly puffed and a creamy sauce. The leg of lamb with tomato, eggplant and zucchini declination is simple and effective, making it part of a good lunch menu, while the rhubarb is beautifully presented on a strawberry base with a herb sorbet. Young, zealous service, a strong Champagne and Burgundy wine list, and a collection of wines from other fashionable regions, with wines by the glass indicated by voice.
