Remarkable Restaurant With the passage of time, Edouard Chouteau has given this highly reputed establishment the stability and high standards it deserves. There's undoubtedly still room for improvement, but the young chef knows how to be patient without rushing things, and has already achieved great success in all areas, from the accuracy and elegance of the service, to the charm of the elegant bourgeois dining room, to the meticulous dishes prepared by a close-knit brigade under the captain's direction. The menus are well composed, and not overpriced: €90 for six courses, with product and workmanship, raw line-caught sea bass, poached langoustine with geranium peas, broad beans and verbena, haddock flan with asparagus, zucchini flower and redcurrants and Flemish beef with smoked eggplant and marrow make a delicious and refined sequence, right up to the raspberry leaf. No eccentricity, just precision and pleasure. A strong cellar of great classics and current references.
