At Nicolas Aubiban's, the comfort of the house does not preclude a rustic tone that smacks of the spirit of the mountains and peasants, reflected in the wood and rough stone, the beautiful fireplace and the summer terrace. The chef's renewed tradition offers a fresh take on the region: zucchini cappuccino with smoked Pyrenean trout, crispy pitou with piquillos, roast hake with celeriac purée, red cabbage and hazelnut oil vinaigrette, duck breast with cherry confit juice, or lemon mousse sablé with mascarpone and kiwi cream.
