Remarkable Restaurant The superb Napoleon III pavilion takes you on a bucolic stroll through the Bois de Boulogne, a privileged site, with its large, highly Instagrammed waterfall, for a moment of relaxation in a mythical pillar of Parisian tradition. Everyone here, long-time servants of this house that has seen so many great chefs pass through its doors, contributes to the success of this timeless moment. Starting with chef Frédéric Robert, whose 16 years of longevity, after several years with Senderens and Pacaud, have stabilized his high-level cuisine, which logically seeks to reassure rather than impress. Stylish dishes, then, such as creamy granny cauliflower and dill crab, turbot with porcini mushrooms and leek with Nantes butter, the unmissable truffle and foie gras macaroni invented here by Jean-Louis Nomicos a quarter of a century ago, and the poached pear and cider tatin on a well-defined €195 menu. The cellar is in perfect harmony, with renowned labels from the major regions.
