Gault&Millau's review 2026

Having been honored last year, Xavier Buzieux stays the course and remains the city’s top chef. It’s at his restaurant that connoisseurs find authentic flavors and genuine ingredients, paired with professional cuisine that has continually evolved: beef medallions with langoustines and wasabi emulsion, veal tenderloin with rosemary jus and candied lemon, and a Saint-Honoré with apricots—all part of the excellent €48 set menu, which is always impeccable and well-presented. The wine list is quite varied and reasonably priced, a hallmark of the restaurant.
