Chef's Restaurant It's been the town's best bet for years, maintaining its two toques thanks to the professionalism and talent of its chef, Xavier Buzieux, who trained with François Déduit at Moulin Fouret. He has retained his principles of uprightness and generosity, which are still very much to the fore, in a menu well prepared to suit today's tastes: crust with two Eure valley trout, wasabi emulsion, quail breast with hoisin jus, brioche abattis, apricot-rosemary crown with fennel coulis in a very pleasant €46 formula. Appropriate cellar at fair prices.
