Sponsored Thanks to its elegant, hushed setting and the complicity of its team members and Julien Nion, a chef from internationally renowned restaurants, La Gauloise has become a signature establishment in just six months. La Gauloise brings back to life the French bourgeois cuisine renowned the world over. These tasty, authentic and ethical recipes call for perfect technical mastery, particularly when it comes to using the whole raw product (a carrot, for example) to sublimate it. The menu follows the seasons, and even varies with them. The Chef likes to visit farmers and markets to judge the quality of the produce. Veal sweetbreads with salsify, butternut, romanesco cabbage, veal jus and morel sauce are a perfect example of his talent. Sauces, which he sees as the essential link between the different textures and flavors of a dish, are one of his great passions. To accompany these delights, you can rely on the advice of the team in the dining room: they'll recommend wines in perfect harmony with the menu! Open daily, non-stop, 9am to 11pm.
