Gault&Millau's review 2026

The second address on the Uza estate, the forge has been renovated by the Lur-Saluces family, owners of the land. It's a well-executed project, with an elegant, rustic-chic feel, terrace and grocery store. The menu features a well-executed tradition: Uza asparagus velouté, wood-grilled home-made gingerbread, thyme-braised lean meats, mashed potatoes and fish stew sauce, crispy sweetbreads, pan-fried mushrooms and pommes grenailles. Choice of pastries on display.
