Chef's Restaurant Beautiful seasonal produce, worked in a modern, natural spirit, these are the good foundations on which Mathieu Goguet can capitalize. The plates are all interesting, with taste and research: pâté en croûte pork loin and black pudding, hake en viennoise with ras el hanout and Espelette pepper, turnip confit with dashi and Szechuan watercress coulis, diplomate kalamansi cookie Joconde with pollen and ginger ice cream in the €33 lunch menu. In the evening, we take things up a notch, with menus at €70 or €85 featuring noble products.
