Chef's Restaurant Behind its rather classical airs lies a table of great stature, led by chef Matthieu Goguet. The small room on rue du Hâ, with its stone walls and Bordeaux style, is home to Basque-inspired cuisine of impeccable execution, local produce and meticulous presentation. On the €70 menu, a starter of red tuna, cucumber, pepper condiment and fermented yuzu, a fine Marmande tomato roasted in papalo oil, mirabelle plum and datil plum, hake from Saint-Jean-de-Luz elegantly steamed with wakame, smoked paprika gnocchi and zucchini, a roasted supreme of Ichoux duckling, black garlic saucier onion, miso eggplant, shiso tempura and full-bodied jus, a 70% chocolate dessert, savory cream, chocolate spoon, crunchy grué tuile and verbena ice cream. Well-stocked cellar.
